Baked Oatmeal

This is by far the best breakfast dish!
  You can prepare it the night before and either bake it that night or in the morning if you have the time to do that in the morning. It is truly better fresh out of the oven but heats up well in the microwave with some milk poured over it. It almost resembles a fluffy oatmeal cookie. You can also play with what type of wet ingredients you use – too much oil for you, use applesauce instead. Have some apples or pears that need to be used, chop them up and put them in. I haven’t tried bananas yet but I bet it would be delish!
Here is the basic full recipe – fits into a 9x13 pyrex dish.
·         3 c quick cook oats
·         ½ c vegetable oil
·         ¾ c white sugar
·         2 eggs
·         1 c milk
·         ½ tsp salt
·         1 Tbs baking powder
·         2 Tbs brown sugar
·         ½ tsp ground cinnamon
Beat oil and sugar together. Mix in eggs, milk, salt, baking powder and oats. Pour into greased pan. Sprinkle with brown sugar and cinnamon. Refrigerate overnight (optional).
Bake at 350 until firm – about 35 minutes.

Some options:
Add in a handful of chopped apples and pears.
Add in raisins and drizzle maple syrup.
Add chopped bananas and chopped walnuts.
Substitute all or part of oil with applesauce.
